    Creamy Italian Chicken Skillet with Spaghetti

    Looking for a new pasta dinner? This creamy Italian chicken skillet is the perfect thing to put over spaghetti. It's so easy and is made all in one skillet!

    This is an easy skillet dinner you need in your life 😍

    I love a skillet meal like this. It's so simple and easy which makes it perfect for a weeknight plus there's less washing up involved which is pretty much essential for me to enjoy weeknight cooking.

    There's loads of good ones on the blog already like this skillet vegetable pie and this breakfast skillet with spicy beans but this Italian chicken skillet is one of my all time favourites.

    I originally posted it on the blog back in 2017, nearly two years ago, but since then it's become something of a comfort classic here in The Cook Report household and when Will requested I make it when he got back from Glastonbury last week I decided it was time to take a couple of new photos.

    Why we love this recipe...

    It's super comforting thanks to the combination of creamy sauce and hearty chicken breasts all served over spaghetti

    It's an easy dinner which comes together in under an hour and makes incredible leftovers

    You can easily make this recipe gluten free by serving it with rice or gluten free pasta

    Ingredients:

    Chicken Breasts: I think these work best in this recipe but you could switch for thighs if you prefer, you'll just need to adjust the cooking time

    Spices: Garlic powder, dried oregano and dried thyme all go in to making this chicken dish really flavourful

    Mushrooms: I use button mushrooms but white or chestnut would also be delicious

    Red Pepper: Thinly sliced and cooked into the sauce for some added sweetness

    Chopped Tomatoes

    Chicken Stock: Or use vegetable if you prefer

    Double Cream: Also known as heavy cream in the US

    Green Olives: Sprinkled through for a kick of saltiness at the end

    Basil

    Spaghetti: Cook according to packet instructions and served with the chicken

    The best thing about this recipe is that it's all made in one skillet. It's just so easy to make.

    You start off by seasoning the chicken and getting it all nicely cooked in the skillet. Once that's done you set it to one side and get started on your sauce. That's a simple combo of veggies, tomatoes and cream plus a lovely sprinkling of olives at the end.

    Although I suppose you could leave out the olives if you don't like them. It really adds to the dish though, I promise. Then you just gotta add those chicken breasts back to the skillet, make sure they're cooked through and serve with a large helping of spaghetti or any other pasta you fancy. Can you think of anything better?

    Preparation

    The chicken and sauce can be prepped ahead of time and stored in the fridge until you're ready to serve. Then just cook your spaghetti and heat up your sauce.

    Creamy Italian Chicken Skillet with Spaghetti

    Ingredients

    • Olive Oil
    • Salt and Pepper

    For the Chicken

    • 4 Chicken Breasts
    • 1 teaspoon Garlic Powder
    • 1 teaspoon Dried Oregano
    • 1 teaspoon Dried Thyme

    For the Sauce

    • 200 g Mushrooms sliced
    • 1 Red Pepper sliced
    • 2 cloves Garlic crushed
    • 1 teaspoon Dried Oregano
    • 1 teaspoon Dried Thyme
    • 1 400g tin Chopped Tomatoes
    • 100 ml Chicken Stock
    • 60 ml Double Cream
    • Handful Pitted Green Olives
    • Fresh Basil Leaves to serve
    • Spaghetti to serve

    Instructions

    • Start by sprinkling the chicken breasts with the garlic powder, oregano, thyme and a good helping of salt and pepper on both sides. Heat a drizzle of olive oil in a skillet and cook the chicken on both sides until browned. Set aside.
    • Heat another drizzle of olive oil and add the garlic, mushrooms and pepper. Cook until softened. Add the remaining dried herbs and some more salt and pepper followed by the chopped tomatoes, chicken stock and cream. Cook for 5-10 minutes.
    • Add the chicken back to the skillet and continue to cook until the chicken is cooked through. I used a meat thermometer to make sure it was fully cooked. Scatter over the olives. Serve with freshly cooked spaghetti and some fresh basil leaves.

      Lovely recipe!! Tried this today and it was delish!! But only thing is, recipe says to have green Olives but does not tell you when to add them, so we just had them on top at the end!

      I'm always interested in a new pasta dinner! I love the combination of the olives and peppers along with the chicken to give a complete meal. Skillet meals are always great for weeknights.
