This easy vegetable ramen is one of those recipes it's great to have up your sleeve when you've had a long day and you need to throw together something quick and delicious.
It's also a recipe that's great for using up any vegetables you find dying in your fridge. Please don't tell me you're so organised that that never happens to you.
Even though we plan all our meals before we do our food shopping we still somehow manage to let something wilt and get gross in our fridge on our fairly regular basis. That's what this kind of recipe is perfect for avoiding.

So let's catch up about weekends for a second. This weekend we went out for some delicious Chinese food.
Not gonna lie, I am not the biggest fan of Chinese food usually. I can't stand Chinese takeaway, I hate the greasy feeling you get in your mouth that just won't shift.
I tend to find that all Chinese takeaway dishes taste very similar and I know real Chinese food definitely isn't supposed to be like that.
That's what was so good about the food on Saturday night. Real, authentic Chinese food and super cheap as well!
We had loads of dumplings which are pretty much my favourite things ever and something they called 'Big Plate Chicken' which was chicken cooked in a super fragrant broth with homemade noodles mixed in. Yum!
Anyway, this easy vegetable ramen might not quite be authentic but it is pretty tasty and for a 30 minute dish it'll definitely put a smile on your face!

Easy Pork Potstickers with a Chilli Dipping Sauce
Recipe
Easy Vegetable Ramen with Leeks and Carrots
Ingredients
- 1 tablespoon Vegetable Oil
- 3 cloves Garlic crushed
- Thumb sized piece Ginger grated
- 2 Leeks chopped
- 1.2 litres Vegetable Stock
- 3 tablespoon Soy Sauce
- 1 tablespoon Mirin
- 1 tablespoon Sesame Oil
- 4 nests Ramen Noodles
- 3 Carrots julienned or spiralised
- 4 Boiled Eggs cooked to your liking
- 2 Radishes thinly sliced
- 1 Lime to serve
- Sesame Seeds to serve
- Red Chilli sliced
- Sriracha or your favourite chilli sauce to serve
Instructions
- Heat the vegetable oil over a medium heat in a large soup pot. Add the garlic and ginger and fry for 5 minutes until soft. Add the leeks and fry for another 5 minutes.
- Pour in the stock, soy sauce, mirin and sesame oil. Bring to a boil then drop in the nests of noodles and the carrot and stir through. Cook the noodles as long as it says on the packet, probably about 3-5 minutes.
- Serve the soup topped with a boiled egg, some sliced radish, a sprinkling of sesame seeds and a slice of lime.
