This easy vegetable ramen is one of those recipes it’s great to have up your sleeve when you’ve had a long day and you need to throw together something quick and delicious. It’s also a recipe that’s great for using up any vegetables you find dying in your fridge. Please don’t tell me you’re so organised that that never happens to you.Even though we plan all our meals before we do our food shopping we still somehow manage to let something wilt and get gross in our fridge on our fairly regular basis. That’s what this kind of recipe is perfect for avoiding.

So let’s catch up about weekends for a second. This weekend we went out for some delicious Chinese food. Not gonna lie, I am not the biggest fan of Chinese food usually. I can’t stand Chinese takeaway, I hate the greasy feeling you get in your mouth that just won’t shift. I tend to find that all Chinese takeaway dishes taste very similar and I know real Chinese food definitely isn’t supposed to be like that.

That’s what was so good about the food on Saturday night. Real, authentic Chinese food and super cheap as well! We had loads of dumplings which are pretty much my favourite things ever and something they called ‘Big Plate Chicken’ which was chicken cooked in a super fragrant broth with homemade noodles mixed in. Yum!
