Ingredients

  • 175 g Red Lentils
  • 225 g Bulgur Wheat
  • 1 Onion finely chopped
  • 1 tablespoon Chilli Paste
  • 1 tablespoon Olive Oil
  • 2 teaspoon Cumin
  • 100 g Rocket (Arugula)
  • Salt and Pepper
  • Olive Oil for frying

Salad

  • ¼ Cucumber chopped
  • 1 Red Pepper chopped
  • 3 medium Tomatoes chopped
  • ½ Red Onion chopped
  • Small bunch Fresh Parsley chopped
  • Small bunch Fresh Mint chopped
  • 2 tablespoon Olive Oil

Instructions

  • Put the lentils in a saucepan with 250ml water and bring to a boil then simmer for 10 minutes. Remove from the heat and add the bulgur wheat, chilli paste, cumin, olive oil, a big pinch of salt and 120ml (½ cup) of boiling water. Mix together then let sit for 15 minutes until all the water has been absorbed.
  • Heat a drizzle of olive oil over a medium heat and fry the onion for 5 minutes until soft. Allow to cool for a few minutes then add to the lentil mixture and stir together.
  • In the pan you used for the onions heat another drizzle of oil. Make small patties out of the mixture. Fry for 3-5 minutes on each side adding more oil as necessary.
  • For the salad, mix together all of the ingredients . Serve the patties with the rocket, salad and pittas. They're great with hummus and chilli sauce too!
