Lighten things up by switching your usual chicken or pork for turkey mince in this simple and tasty udon noodle stir fry. Perfect for a healthy midweek dinner, this recipe is ready in 20 minutes!
Heat 1 tablespoon of sesame oil to a wok and heat over a high heat until nearly smoking. Add the garlic, ginger and sichuan pepper corns to the wok and cook for 20 seconds before adding the turkey mince. Cook for 10 minutes until there's no more pink bits and some parts are starting to crisp.
Meanwhile make the sauce by mixing all the ingredients together. Add the pak choi and chilli to the wok and quickly cook for a couple of minutes. Add the sauce and cook for another 2 minutes.
Serve the turkey with the udon noodles and topped with the chopped peanuts and slice of lime.
