Tomato and Mozzarella Toasts

These tomato and mozzarella toasts make a brilliant lunch or dinner. Toast is topped with roasted cherry tomatoes, fresh mozzarella and basil leaves then baked until melty and delicious!

  • 300 g Cherry Tomatoes
  • 4 tablespoon Olive Oil
  • 1 Chilli deseeded and sliced
  • 4 sprigs Thyme
  • 2 cloves Garlic smashed
  • Salt and Pepper
  • 20 g Basil chopped
  • 250 g Mozzarella torn
  • 4 thick slices Sourdough or bread of your choice
  • Balsamic Vinegar/Glaze to serve


  • Heat the oven to 200°C/400°C. Put the tomatoes, garlic, chilli and olive oil on a baking sheet, season well and toss. Roast for 25-30 minutes then stir through the basil. Switch the oven to the grill on high.
  • Place the bread on a baking sheet. Split the tomatoes between the 4 pieces of bread then top with the mozzarella. Drizzle over any leftover oil from cooking the tomatoes. Put the sandwiches underneath the grill and cook until browned. Serve drizzled with balsamic vinegar.
