Egg Fried Noodles with Pork

These egg fried noodles are made with flavourful ground pork, udon noodles and oyster sauce. It's such an easy stir fry recipe which makes the perfect midweek dinner.

Ingredients

  • ½ lb /250g Pork Mince
  • 2 tablespoon Fresh Ginger grated
  • 2 cloves Garlic crushed
  • 1 tablespoon Soy Sauce
  • ½ tablespoon Fish Sauce
  • ½ tablespoon Chinese Five-Spice Powder
  • 1 Spring Onion sliced
  • Small Bunch Coriander chopped
  • Salt and Pepper
  • 2 tablespoon Plain Flour
  • 2 tablespoon Oil
  • 2 Eggs
  • 10½ oz /300g Straight to wok Udon Noodles
  • 3 tablespoon Oyster Sauce
  • 2 tablespoon Sesame Oil
  • Sesame Seeds to serve
  • Spring Onion chopped, to serve

Instructions

  • Mix the pork, ginger, garlic, soy sauce, fish sauce, five spice, spring onion and coriander together in a bowl. Pinch off 1cm pieces of the mixture and toss in the flour.
  • Heat the oil in a wok over a high heat and fry the pieces of pork until brown and crispy. Add the broccoli and fry for another couple of minutes. Push to the side then add the eggs and scramble slightly allowing them to cook.
  • Add the noodles and stir fry until hot, tossing with the pork and egg. Add the oyster sauce and sesame oil and remove from the heat. Divide between two bowls, sprinkle over the sesame seeds and spring onions. Serve with soy sauce.
