Ingredients

For the Peanut Sauce

  • 125 g Crunchy Peanut Butter
  • 1 tablespoon Soy Sauce
  • 1 tablespoon Chilli Paste
  • 1 tablespoon Lime Juice
  • 1 tablespoon Sugar
  • 60 ml Warm Water

For the Sesame Cucumber

  • ½ Cucumber
  • Salt
  • 1 clove Garlic crushed
  • ½ teaspoon Rice Vinegar
  • ½ teaspoon Sesame Oil
  • Sesame Seeds to garnish

For the Chicken

  • 300 g Skinless Boneless Chicken Thighs (4 thighs)
  • 1 tablespoon Soy Sauce
  • 1 tablespoon Honey
  • 1 fat clove Garlic crushed

Instructions

  • To make the sauce whisk together all the ingredients and set aside until ready to use.
  • To make the cucumber hit the cucumber a few times with a rolling pin. Slice the cucumber and place in a colander with a sprinkling of salt. Put the colander over a bowl and leave for 10 minutes. Place the cucumber in a bowl and mix with the sesame oil, rice vinegar and garlic. Garnish with the sesame seeds.
  • To make the chicken coat the chicken thighs with the soy sauce, honey and garlic in a bowl then cook on a grill or barbecue for about 5 minutes each side until cooked through. Serve with the sauce, cucumber and your grain of choice.
