Ingredients

  • 200 g Medium Raw Prawns shelled, deveined & tails removed
  • 40 g Fine Cornmeal
  • 40 g Plain Flour
  • ½ tablespoon Cajun Seasoning
  • 1 Egg beaten
  • Vegetable Oil for frying
  • Lettuce to serve
  • 4 Small Sandwich Rolls sliced open

For the Sauce

  • 3 tablespoon Dijon Mustard
  • 5 tablespoon Mayonnaise
  • 1 teaspoon White Wine Vinegar
  • 1 clove Garlic crushed
  • ½ teaspoon Hot Sauce
  • 1 teaspoon Cajun Seasoning

Instructions

  • Mix the cornmeal, flour and cajun seasoning together in a bowl. Place the beaten egg in another bowl. Dip the prawns in the egg followed by the cornmeal and flour mixture until coated. Heat about ¼ inch vegetable oil in a frying pan over a medium-high heat then fry the prawns in batches until browned on both sides, about 2 minutes altogether. Place on a paper towel lined plate.
  • Mix together all the sauce ingredients in a bowl.  Spread each bread roll with a thick layer of sauce, top with lettuce and prawns and serve.
