Mix the cornmeal, flour and cajun seasoning together in a bowl. Place the beaten egg in another bowl. Dip the prawns in the egg followed by the cornmeal and flour mixture until coated. Heat about ¼ inch vegetable oil in a frying pan over a medium-high heat then fry the prawns in batches until browned on both sides, about 2 minutes altogether. Place on a paper towel lined plate.
Mix together all the sauce ingredients in a bowl. Spread each bread roll with a thick layer of sauce, top with lettuce and prawns and serve.
