Prawn Po'Boys with Tangy Cajun Sauce
Prawn po' boys are made up of crispy prawns nestled into a bread roll with crunchy lettuce & tangy Cajun sauce. Bring a taste of New Orleans to your home!
Servings 4 sandwiches
- 200 g Medium Raw Prawns shelled, deveined & tails removed
- 40 g Fine Cornmeal
- 40 g Plain Flour
- 1/2 tbsp Cajun Seasoning
- 1 Egg beaten
- Vegetable Oil for frying
- Lettuce to serve
- 4 Small Sandwich Rolls sliced open
For the Sauce
- 3 tbsp Dijon Mustard
- 5 tbsp Mayonnaise
- 1 tsp White Wine Vinegar
- 1 clove Garlic crushed
- 1/2 tsp Hot Sauce
- 1 tsp Cajun Seasoning
Mix the cornmeal, flour and cajun seasoning together in a bowl. Place the beaten egg in another bowl. Dip the prawns in the egg followed by the cornmeal and flour mixture until coated. Heat about 1/4 inch vegetable oil in a frying pan over a medium-high heat then fry the prawns in batches until browned on both sides, about 2 minutes altogether. Place on a paper towel lined plate.
Mix together all the sauce ingredients in a bowl. Spread each bread roll with a thick layer of sauce, top with lettuce and prawns and serve.
