Greek Orzo Salad with Lemon Dressing
Throw together this simple Greek orzo salad for a quick summer dinner. With all the ingredients of a classic Greek salad but tossed with orzo pasta and herby dressing this is my favourite thing to serve as a side at a summer party.

250 g Orzo 200 g Tomatoes chopped ½ Cucumber chopped 150 g Black Olives halved 200 g Feta cubed Bunch Parsley chopped Bunch Mint chopped For the Lemon Dressing 6 tablespoon Olive Oil 1 Lemon juiced 1 clove Garlic crushed Salt and Pepper
Cook the orzo according to packet instructions. Chop all your ingredients and add to a large bowl along with the orzo once it's cooked.
Whisk together all the dressing ingredients. Pour the dressing over the orzo and vegetables and toss everything gently. Serve.
