Heat the oven to 180°C/350°F. Cut the bread into cubes and place on a baking sheet, toss with olive oil, butter, garlic, salt, pepper and thyme then bake for 20 minutes until golden.
Whisk together the first six dressing ingredients and then thin with water until you reach a pouring consistency.
Put the kale in a bowl, drizzle with olive oil and salt and pepper and massage for a minute. Toss with the dressing then add the croutons and toss again.
