Kale Salad with Croutons & Tahini Dressing

This simple kale salad is topped with garlic butter croutons and a creamy tahini dressing. It makes the perfect side dish to so many meals!

Ingredients

  • 300 g/10oz Crusty Bread
  • 3 tablespoon Olive Oil
  • 3 tablespoon Butter melted
  • 4 cloves Garlic crushed
  • Salt and Pepper
  • 1 teaspoon Dried Thyme
  • 1 bunch (250g/4 cups) Kale stems removed, chopped

Dressing

  • 5 tablespoon Tahini
  • 3 tablespoon Lemon Juice
  • 1 tablespoon Olive Oil
  • 3 cloves Garlic crushed
  • 1 tablespoon Honey
  • Salt and Pepper
  • Water as needed

Instructions

  • Heat the oven to 180°C/350°F. Cut the bread into cubes and place on a baking sheet, toss with olive oil, butter, garlic, salt, pepper and thyme then bake for 20 minutes until golden.
  • Whisk together the first six dressing ingredients and then thin with water until you reach a pouring consistency.
  • Put the kale in a bowl, drizzle with olive oil and salt and pepper and massage for a minute. Toss with the dressing then add the croutons and toss again.
