Spicy Roasted Cauliflower with Hummus

For this spicy roasted cauliflower the florets are tossed with smoked paprika and chilli powder, roasted until tender and served over hummus for the perfect light lunch or party snack!

Ingredients

  • 1 head of Cauliflower cut into small florets
  • 2 tablespoon Olive Oil
  • 2 teaspoon Smoked Paprika
  • 2 teaspoon Cumin
  • ½ teaspoon Chilli Powder
  • 2 cloves Garlic crushed
  • Salt and Pepper
  • 200 g/7 oz Hummus store bought or homemade
  • Small Bunch Fresh Parsley chopped
  • Pomegranate Molasses for drizzling
  • Tahini for drizzling
  • 1 Lemon juiced and zested
  • Flatbreads for serving

Instructions

  • Heat oven to 220°C/430°F. Put the cauliflower florets in a large bowl with the olive oil, smoked paprika, cumin, chilli power, garlic and plenty of salt and pepper. Toss together until the cauliflower is coated.
  • Spread the cauliflower on a baking sheet and place in the oven for 30 minutes until tender and caramelised.
  • Spread the hummus out in a serving bowl using the back of a spoon and top with the roasted cauliflower. Sprinkle over the parsley and lemon zest and then drizzle over the pomegranate molasses, tahini and lemon juice. Serve with flatbread.
