    Spicy Roasted Cauliflower with Hummus

    For this spicy roasted cauliflower the florets are tossed with smoked paprika and chilli powder, roasted until tender and served over hummus for the perfect light lunch or party snack!

    So I've made this recipe so many times recently. I've put it on our meal plan, bought all the ingredients, made it and then every single time we've been so excited to eat it that I haven't had time to take photos.

    Cauliflower is one of my favourite vegetables. Whether it's cauliflower wings with a sweet and spicy dip, a smooth and creamy cauliflower soup or this super comforting cheese covered cauliflower bake.

    And this spicy cauliflower with hummus is another delicious cauliflower recipe to add to the list. It works great as a main course just served with some flatbread or pitta, as part of meze with a bunch of other dishes or as a side dish to some chicken or another meat.

    Ingredients

    • Cauliflower
    • Spices: I like to use a combination of smoked paprika, cumin and chilli powder for that spicy kick
    • Hummus: To keep things simple I use a pot of store bought hummus but you could definitely make your own. Try out this butternut squash hummus for a fun twist on the classic!
    • Parsley
    • Tahini
    • Pomegranate Molasses
    • Lemon
    • Flatbreads

    Instructions

    Roast the cauliflower: Preheat the oven. Cut cauliflower into florets. Toss the cauliflower florets with the olive oil and the spices then spread on a large tray and roast until tender and beginning to brown.

    Put together: Spread your hummus in a serving bowl, top with the roasted cauliflower.

    Serve: Sprinkle over herbs and lemon zest followed by drizzles of pomegranate molasses, tahini and lemon juice. Serve with flatbread.

    Hint: when roasting vegetables make sure they're spread out in a single layer on a baking sheet so that they cook evenly and get nice and caramelised.

    Substitutions

    • Cauliflower - while I love the flavour and mouth feel of the roasted cauliflower here, pretty much any other roasted vegetable would be delicious. Try broccoli or butternut squash. Or you could even try a mixture!
    • Hummus - different types of hummus would be so tasty here - you could try a red pepper or white bean one
    • Spices - you could mix up the spices you use on the cauliflower. A blend like ras el hanout would be really good here or a mixture of garlic powder or turmeric would also be tasty

    Variations

    • Spicy - add a sprinkle of red pepper flakes or a drizzle of hot sauce before serving for an extra kick
    • Protein - if you want to bulk this recipe out a bit then you could serve it with shredded roast chicken or even steak

    Storage

    You can make this recipe a day or two ahead of time and store in the fridge until ready to serve.

    Leftovers of this spicy roasted cauliflower recipe lasts well for a few days, just store in an airtight container in the fridge.

    Top tip

    If you don't want to serve this with bread then you could try lettuce leaves or cucumber slices as a scoop for all this hummus and cauliflower deliciousness!

    FAQ

    What spice goes well with cauliflower?

    For this roasted cauliflower dish I use a mixture of smoked paprika, cumin and chilli powder but cauliflower is the perfect base for so many flavours. Try ground coriander, garam masala or curry powder depending on what you're in the mood for.

    Why does my roasted cauliflower go mushy?

    This can happen when the cauliflower is overcrowded in the pan. Make sure you use the biggest baking sheet you can to give the cauliflower as much space as possible so it can get caramelised.

    Ingredients

    • 1 head of Cauliflower cut into small florets
    • 2 tablespoon Olive Oil
    • 2 teaspoon Smoked Paprika
    • 2 teaspoon Cumin
    • ½ teaspoon Chilli Powder
    • 2 cloves Garlic crushed
    • Salt and Pepper
    • 200 g/7 oz Hummus store bought or homemade
    • Small Bunch Fresh Parsley chopped
    • Pomegranate Molasses for drizzling
    • Tahini for drizzling
    • 1 Lemon juiced and zested
    • Flatbreads for serving

    Instructions

    • Heat oven to 220°C/430°F. Put the cauliflower florets in a large bowl with the olive oil, smoked paprika, cumin, chilli power, garlic and plenty of salt and pepper. Toss together until the cauliflower is coated.
    • Spread the cauliflower on a baking sheet and place in the oven for 30 minutes until tender and caramelised.
    • Spread the hummus out in a serving bowl using the back of a spoon and top with the roasted cauliflower. Sprinkle over the parsley and lemon zest and then drizzle over the pomegranate molasses, tahini and lemon juice. Serve with flatbread.
