    Will and I have a real hatred of this thing that's super fashionable these days of making something vegetarian and calling it a meaty name. For example portobello 'steak', cauliflower 'wings'.

    It's just all kinds of nonsense. I'd much rather eat a portobello mushroom that isn't claiming it's anything like a steak. I don't enjoy lying, especially when it comes to food.

    Having said all that though I feel like veggie burgers are legit. There's not a quotation mark in sight because everyone knows that a veggie burger isn't really pretending to be a burger.

    It's just something that happens to taste brilliant in between a bun with a traditional burger accompaniment or two.

    Ingredients you need to make these chickpea quinoa veggie burgers:

    • Quinoa
    • Chickpeas
    • Breadcrumbs
    • Garlic Powder
    • Smoked Paprika
    • Cumin
    • Chilli Powder
    • Brown Sugar
    • Chipotle Chilli Paste
    • Olive Oil

    These chickpea quinoa veggie burgers are a wonderful vegetarian meal in their own right. They're smoky from the paprika and chipotle paste and fresh with juicy tomatoes and avocado on top (totes optional, I had mine without obvs).

    You could add whatever other topping you like and probably multiple sauces because what's a burger without sauce?

    The great thing about these burgers is that they're so filling you can eat them just as is.

    The use of quinoa and chickpeas means that they're full of protein which will keep you full for ages. Plus there's bread and veg and it's all round pretty healthy!

    Ingredients

    • 140 g Quinoa cooked
    • 1 400g tin Chickpeas drained
    • 75 g Breadcrumbs
    • 1 teaspoon Garlic Powder
    • 1 teaspoon Smoked Paprika
    • 1 teaspoon Cumin
    • 1 teaspoon Chilli Powder
    • 1 tablespoon Brown Sugar
    • 2 tablespoon Chipotle Chilli Paste
    • 1 tablespoon Olive Oil
    • 4 Burger Buns
    • Avocado, Tomato Slices, Spinach Leaves to serve

    Instructions

    • Blend the chickpeas until mostly smooth. Tip into a bowl and mix with the quinoa, breadcrumbs, spices, sugar and chilli paste. Split into four patties, if the mixture us too dry add a little oil. Place the patties on a plate.
    • Heat the oil in a skillet. Once it's hot cook the burgers for 5 minutes on each side until they're brown and a bit crispy. Serve in burger buns with avocado, tomato or anything else you fancy!
