    Chopped Prawn Salad

    This delicious chopped prawn salad is so fresh and flavourful. With cucumber, red pepper and a hint of chilli it's perfect scooped into tortilla chips.

    When the weather is warm I'm always craving light and fresh recipes with prawns in them - recipes like this pesto pasta salad with prawns or these harissa prawns with smashed potatoes.

    This salad is another ones that's just bursting with freshness. I cannot get enough. We served it up with crunchy tortilla chips and they were the perfect thing to balance out the spicy and crisp flavours of the salad.

    Not only is it delicious, it's also ridiculously easy to make. I like to poach the prawns from raw but you can even buy ready cooked ones to make it even quicker to prep.

    Other than the prawns you basically just need to do loads of chopping, make a quick dressing and add everything to a bowl. Toss together and serve.

    Ingredients and Substitutions

    King Prawns: I use raw and poach them while I chop the rest of the ingredients but you can buy ready cooked ones if you want to cut out a step

    Limes

    Garlic

    Lemon

    Fish Sauce: It adds so much flavour but switch for soy sauce if you really don't like it

    Chilli Flakes

    Chilli Crisp

    Cucumber

    Cherry Tomatoes

    Red Pepper

    Red Onion

    Green Chilli

    Coriander

    Serving Suggestions

    This salad is really perfect served scooped up with tortilla chips. If you want something more substantial then you could serve it up in a wrap or in tacos.

    Leftovers are great on toast and sprinkled with plenty of hot sauce.

    Prawn Salad Tips and Tricks

    • Try to get the freshest and biggest prawns you can. Fresher prawns will be flavourful and firm and bigger prawns work well for this salad as you can chop them into bitesized pieces easily.
    • This salad is best eaten straight away when all the ingredients are still fresh and retaining plenty of crunch. If you do have any leftovers then store in an airtight container in the fridge and eat as soon as possible.

    Ingredients

    • 300 g Raw King Prawns
    • 3 Limes
    • 1 clove Garlic crushed
    • ½ Lemon juiced
    • 1 teaspoon Fish Sauce
    • 1 tablespoon Chilli Flakes
    • 1 tablespoon Chilli Crisp
    • ½ Cucumber diced
    • 200 g Cherry Tomatoes diced
    • 1 Red Pepper diced
    • ½ Red Onion diced
    • 1 Green Chilli seeded and finely chopped
    • 100 g Coriander finely chopped

    Instructions

    • Poach the 300 g Raw King Prawns. Bring a large saucepan of water to the boil with a pinch of salt. Add the prawns then turn off the heat and leave to sit for 5 minutes. Scoop out into a bowl of ice water.
    • Put the 1 clove Garlic and zest of a lime into a large bowl. Add the juice of all the 3 Limes and the ½ Lemon , 1 teaspoon Fish Sauce, 1 tablespoon Chilli Crisp, salt and pepper.
    • Drain the prawns and cut into bitesize chunks. Add to the bowl with the lime juice. Sprinkle over the 1 tablespoon Chilli Flakes, add the ½ Cucumber , 200 g Cherry Tomatoes , 1 Red Pepper , ½ Red Onion and 1 Green Chilli . Stir well. Sprinkle over the chopped 100 g Coriander and mix well again.
    • Serve with tortilla chips for scooping.
