Throw together this simple Greek orzo salad for a quick summer dinner. With all the ingredients of a classic Greek salad but tossed with orzo pasta and lemon dressing this is my favourite thing to serve as a side at a summer party.
Greek salad is such a good classic right? It includes so many of my favourite ingredients but, let's be honest, it's severely lacking in carbs.
That's where this Greek orzo salad comes in. Pasta is the number one food in my life so it's only a matter of time until I add it to every other meal I enjoy.
Only one more week at work before I go on holiday with my family! Which means baby cuddles and time to work and sleeping and eating and hanging out with my favourite people. I am very excited.
It also happens to be one week until I turn 27 😱 When I turned 26 I had a bit of a moment of 'how the hell did I get to 26, I still feel like I just graduated?!'. I am really hoping that doesn't happen again this year. Although 27 is officially late twenties which is fully terrifying.
Anyway, I'm going to try and keep it together this year. I'll be celebrating with a lunch with my whole family and a few gin and tonics and I have my fingers firmly crossed for a sunny day. I feel very lucky that I have a summer birthday.
Especially because summer food is my favourite. Summer food like this Greek orzo salad.

- Orzo
- Tomatoes
- Cucumber
- Black Olives
- Feta
- Olive Oil
- Lemon
- Mint
- Parsley
- Garlic
- Salt and Pepper

Greek salad is such a good summer dish, right? It's fresh and has so many ingredients which taste especially good when they're in season in the summer.
I invested in the very best tomatoes I could get for this recipe because cheap tomatoes are one of those things that just aren't worth eating.
It's unbelievably easy to put this salad together and once I'd made it the first time Will and I both decided that this was going to be the salad we'd be making for barbecues and picnics all summer long.
A lot of the ingredients in this salad are some of my favourites so I love it for a summer dinner. Cucumber, tomato, feta and olives are all things I have on hand most of the time because they work in so many different recipes or just as snacks on their own.
I sometimes find feta a little overly salty on its own but it works so well in a Greek salad because of the cucumber and tomato to balance it out.
Another thing I love about this Greek orzo salad is that everything is chopped up into perfectly bite sized pieces so I can just scoop it all up with a spoon and shovel it into my mouth.
Which is how we all want to be eating salads right?
HOW TO MAKE GREEK ORZO SALAD WITH LEMON DRESSING:
- Cook the orzo according to packet instructions then drain and place in a large bowl
- While the orzo is cooking chop all of your salad ingredients into bite sized pieces and add them to the bowl with the cooked orzo
- Whisk together the dressing ingredients and pour over your salad ingredients. Toss together and serve.

Recipe
Greek Orzo Salad with Lemon Dressing
Ingredients
- 250 g Orzo
- 200 g Tomatoes chopped
- ½ Cucumber chopped
- 150 g Black Olives halved
- 200 g Feta cubed
- Bunch Parsley chopped
- Bunch Mint chopped
For the Lemon Dressing
- 6 tablespoon Olive Oil
- 1 Lemon juiced
- 1 clove Garlic crushed
- Salt and Pepper
Instructions
- Cook the orzo according to packet instructions. Chop all your ingredients and add to a large bowl along with the orzo once it's cooked.
- Whisk together all the dressing ingredients. Pour the dressing over the orzo and vegetables and toss everything gently. Serve.
