This quick and easy feta and spinach pesto recipe works perfectly with pasta, spread on sandwiches and as a dip for vegetables!
This recipe was originally posted on the blog near the very beginning of this journey back in March 2016. I've come a long way since then but this recipe is still as wonderful as ever so I wanted to add some brand spanking new photos to help make it look as good as it tastes! The text below was written when I originally posted it in 2016.
I am so glad it's nearly the end of the week. 4 days and I'll be in LA! Work has been crazy busy this week getting through all the work I need to get done before I leave.
When I got home from work last night I wanted something that would be ready in 15 minutes or less. I had spinach and feta that needed eating and walnuts in the cupboard so feta and spinach pesto was the obvious answer!
You could definitely serve this with stuff other than pasta. I have a batch frozen that I might try with some chicken or maybe even lamb since it's kind of a Greek flavour combination.
It would also be so good smeared on a sandwich with a bit of cheese and salad.
Oh oh oh alternatively just store it in the fridge and grab it with a few slices of bread or some chopped vegetables for dipping and you've got yourself one dreamy snack.
INGREDIENTS YOU NEED TO MAKE THIS SPINACH PESTO WITH FETA & WALNUTS:
- Spinach Leaves - Use up leftovers in this one pot pasta with chicken
- Feta - Use any extra in this summer feta salad or this baked feta
- Walnuts
- Olive Oil
- Lemon
- Salt and Pepper

CAN YOU USE A DIFFERENT NUT IN THIS PESTO?
Definitely. I've made it with pine nuts before which worked really well but I think that any nut would work well so pick your favourite (or the ones you have in the cupboard already) and go ahead and make this pesto.
HOW TO MAKE SPINACH PESTO WITH FETA & WALNUTS (STEP BY STEP):
- Add the spinach, feta, walnuts and olive oil to the food processor and blend until smooth.
- Add the lemon juice and a sprinkling of salt and pepper and blend again.
- Serve tossed with pasta or however else you fancy.

In other news, I've somehow started watching 90210 again. I was rewatching Gossip Girl and now I've finished it (already missing Chuck and Blair ngl) so I was looking for something else on Netflix that I could just rewatch easily.
But really? 90210? I actually remember it being a lot better than it is (ok, I know it was never good but I was pretty into it at one point).
Definitely need to find something new to watch when I'm hanging out on my own, any and all suggestions welcome.

Spinach Pesto with Feta & Walnuts
Ingredients
- 150 g Fresh Spinach
- 90 g Feta
- 75 g Walnuts
- 4 tablespoon Olive Oil
- ½ Lemon juiced
- Salt and Pepper
Instructions
- Put the spinach, feta, walnuts and olive oil into a blender and blend until it has reached your preferred consistency.
- Add the lemon juice and salt and pepper to taste. If you're serving it with pasta sprinkle with some grated parmesan and lots of black pepper.
