    Buffalo Chicken Flatbreads

    These buffalo chicken flatbreads are so easy to make! They’re perfect for a quick lunch or even as a party snack.

    These flatbreads are the perfect mix of cheesy and spicy. I love how packed with flavour they are when you just need a handful of ingredients to make them.

    By using store-bought flatbreads and a rotisserie chicken you can make them so super quickly which is ideal when you’re in need of an easy meal.

    I was inspired to make these flatbreads by my recipe for buffalo tofu wraps. The buffalo sauce and blue cheese is a classic combination and of course the chicken is the perfect partner for them.

    They would be great served with a side salad like this tomato and cucumber salad or even this kale salad.

    Ingredients

    I wanted to keep this recipe as simple as possible so you can really throw it together when you’re in a time crunch. Therefore we’ve got some great recipe shortcuts which help to keep it as speedy as possible.

    • Flatbreads
    • Cream Cheese
    • Chicken - You can cook and shred your own but I went with store bought cook chicken breasts and shredded them before cooking
    • Buffalo Sauce - I used Franks
    • Cheddar
    • Blue Cheese - Crumbled, to serve
    • Parsley

    Instructions

    Flatbreads on a baking sheet

    Put the flatbreads on a lined baking sheet.

    Spread the flatbreads with the cream cheese.

    Shred the chicken in a bowl and add the buffalo sauce, mix well then spread on the flatbreads.

    Sprinkle with the grated cheddar and place in the oven.

    Once the cheese is melted remove from the oven.

    Sprinkle with the blue cheese and parsley and serve.

    Hint: If you don’t like blue cheese then you can easily leave it off and the flatbreads will still taste delicious!

    Substitutions

    • Flatbreads - I can get good store bought flatbreads at my local shop but you could also use naan or pitta if you can’t get flatbreads
    • Cheddar - There are loads of other cheeses you can use for this recipe - mozzarella or provolone would both be good here
    • Gluten-Free - Switch out the flatbread for your favourite gluten-free brand

    Variations

    • Buffalo Sauce - You could switch up the flavour by swapping the buffalo sauce for something else like barbecue sauce or chipotle paste
    • Deluxe - Add avocado slices, blue cheese dressing or crispy onions before serving for an extra hit of flavour
    • Extra Veggies - Some chopped spinach or small broccoli florets would be a tasty addition

    Storage

    Leftovers keep well in the fridge in a tupperware or wrapped in foil for up to three days.

    These aren’t suitable for freezing.

    Top tip

    Be careful not to overdo it with the buffalo sauce and make the flatbreads too soggy! Add a bit at a time until the chicken is nicely coated. If you still have some leftover then serve it on the side!

    FAQ

    Should you toast flatbread?

    For this recipe there’s no need to toast the flatbreads before using them. Just spread your toppings over them and pop them in the oven.

    Can you eat these flatbreads cold?

    Yes! The leftovers totally work cold, think cold pizza vibes. If you prefer to heat the leftovers then you can pop them in the oven for a couple of minutes to reheat.

    Ingredients

    • 2 Flatbreads
    • 60 g/2 oz Cream Cheese
    • 120 ml/½ cup Buffalo Sauce
    • 200 g/7oz Cooked Chicken shredded
    • 150 g/5oz Cheddar Cheese grated
    • 100 g/3½ oz Blue Cheese crumbled
    • Parsley finely chopped, to serve

    Instructions

    • Heat the oven to 200°C/400°F. Place the flatbreads on a baking sheet and spread with the cream cheese.
    • Put the shredded chicken in a large bowl. Add the buffalo sauce and mix well. Spread over the flatbreads. Top with the cheddar cheese.
    • Place in the oven and cook for about 15 minutes until the cheese is melted and browned.
