Honey glazed halloumi is the perfect combination of sweet and salty. Serve with cooling tzatziki and a grain of your choice for a filling summer dinner.
Ugh I am so in love with this summer dinner! You've got halloumi with a sweet and spicy honey glaze, a cooling and creamy tzatziki and then on my plate I added a handful of green leaves, a scoop of couscous and some flatbread to finish off.
All in all this makes an absolute dream combination of flavours and textures which would be totally appropriate as a casual dinner party main or a simple summer dinner for two.
I have so many halloumi recipes already on this site as it's honestly one of my favourite summer (or, let's be honest, all year round) ingredients and a few of them inspired the flavour combinations in this honey glazed halloumi recipe.
The combination of halloumi and honey works perfectly in this chopped salad recipe. Meanwhile the freshness of cucumber and herbs working amazingly with the salty cheese is highlighted in this halloumi breakfast bowl or in this halloumi pasta.
Ingredients
- For the Tzatziki you will need
- Greek Yoghurt
- Cucumber
- Shallot
- Mint
- Dill
- Lemon Juice
- Garlic
- Salt
- Halloumi - cut this into nice thick slices
- Hot Honey - I make this by just combining honey and chilli flakes
- Green Leaves - I used rocket (arugula) but you could also use watercress or spinach
- Grain - Couscous is my preference but whatever you have on hand will work

Instructions
Put the grated cucumber, herbs, shallot, garlic, lemon juice and yoghurt together in a bowl.
Mix together well and set aside.
Put the couscous into a heatproof bowl and add boiling water or stock. Leave to sit for 10 minutes then fluff with a fork.
Heat a drizzle of oil in a frying pan and fry the halloumi until browned on both sides.
While the halloumi cooks heat the honey in the microwave and add the chilli flakes to taste.
When the halloumi is nearly cooked pour over the hot honey and allow to bubble for a couple of minutes. Serve with the tzatziki and couscous.
Hint: To avoid watery tzatziki you need to squeeze as much liquid from the cucumber as possible which will help to keep your sauce lovely and creamy!
Substitutions
- Greens - instead of rocket you can use watercress or spinach for a slightly different flavour
- Grain - use any grain you like here, bulgur wheat or even rice would work well in place of the couscous
- Vegetarian - make sure you check that your halloumi is suitable for vegetarians as some brands can include animal rennet
Variations
- Spicy - I like to add about a teaspoon of chilli flakes to the honey but you could increase that if you want more of a kick. This dish would also be great served with hot sauce for an extra level of spiciness!
- Deluxe - feel free to fancy up your sides here - some chopped avocado, halved cherry tomatoes or grilled asparagus would all be delicious along with your rocket

Equipment
To fry halloumi I like to use a non-stick pan which is especially good when you add the sticky honey to the halloumi. I like this one.
I also hate grating vegetables so having this Magimix food processor with grating attachment is an absolute dream and saves so much time!
Storage
Store leftovers separately in sealed containers in the fridge. Halloumi gets a bit squeaky when it goes cold - I don't mind it cold but generally it's best served freshly cooked.
This recipe cannot be frozen.
Top tip
Be careful not to overcook the halloumi! It's best when golden on both sides but it can dry out if you leave it in the pan for too long.
FAQ
You can definitely cook halloumi in the oven rather than on the stovetop. Heat the oven to 200°C and add the halloumi to an oven proof dish then pour over the honey mixture and cook in the oven for about 10-15 minutes.
While the halloumi is best eaten freshly cooked you can definitely meal prep a large part of this recipe ahead of time. The tzatziki can be made and stored in the fridge for up to 3 days. You can also make the honey glaze and cook the couscous and store both in the fridge until ready to assemble your dish.

Honey Glazed Halloumi with Chilli & Tzatziki
Ingredients
- ½ Cucumber grated
- 200 g Greek Yoghurt
- 1 Shallot finely chopped
- 1 clove Garlic crushed
- 2 tablespoon Fresh Dill chopped
- 2 tablespoon Fresh Mint chopped
- ½ Lemon juiced
- Salt
- 250 g Halloumi
- 2 tablespoon Honey
- 1 teaspoon Chilli Flakes
- 85 g Rocket (Arugula)
- 60 g Couscous
- 120 ml Vegetable Stock or Water
- Olive Oil for drizzling
- Flatbread or Pitta to serve
Instructions
- Start by making the tzatziki. Put the grated cucumber in a clean tea towel and squeeze tightly over the sink to remove excess moisture. Put the cucumber in a large bowl with the yoghurt, shallot, garlic, parsley, mint and lemon juice. Mix everything together then season with salt to taste. Set aside.
- Put the couscous in a large heatproof bowl. Pour over the hot vegetable stock or water, stir and cover the bowl with a clean towel and leave for 10 minutes. Fluff with a fork and set aside until ready to serve.
- Slice the halloumi into 6 thick pieces. Heat a frying pan over a medium heat with a drizzle of oil. Add the halloumi and cook until browned on one side then flip and brown the other side. While the halloumi cooks heat the honey in the microwave for 20 seconds then add the chilli flakes and mix well. Just before the halloumi is finished cooking drizzle over most of the hot honey and allow to bubble for 20 seconds then remove from the heat.
- Split the tzatziki between 2 plates and top with the halloumi, couscous and rocket. Drizzle with the remaining hot honey and a little olive oil.
